Cabernet Sauvignon is a powerful black grape that does play well with others and is often blended with Merlot and others in making a Bordeaux blend. It is very tannic, has good acidity and is full bodied. The wines in this flight are labeled as Cabernet Sauvignon but in many new world wine regions that only means the wine has to be about 75% to 80% Cab thus you are getting something else in the wine. My identifiers for Cabernet Sauvignon are a strong black fruit presence and I always seem to detect hints of bell peppers.
In terms of food pairings it will pair well with BBQ meats including some wild game. For fun try it with a chocolate chip cookie!
