I tasted this wine at Okanagan Crush Pad which offers a cool tour of their wine making operation.
The concrete tanks come from Italy and allow for the fermenting of wines with minimal intervention and native yeasts. This free form wine is fermented in stainless steel tanks. It undergoes malolactic fermentation and nine months of skin contact then is pressed and bottled unfiltered.
It was really interesting to share this wine with my Sauvignon Blanc friends. They were surprised by the earthiness and mouth feel of this wine compared to their usual experience with the incredibly tight, crisp Marlborough style. Having a more full-bodied experience of this varietal with native yeast and no filtration was indeed unique. The plus for me was the fact that everything was more delicate and rounded than a typical Sauvignon Blanc. But be ready as this free form treatment really does change the profile of what you may be expecting.
This is a great wine to try out and let your palate experience something new.
